“Echigohime” Strawberry is signature product at Yajiro farm in the Spring and is also known as the 'Princess of Niigata'.
The strawberries are large and the flesh is as soft as a baby's skin, making them very juicy and sweet. In Niigata, where daylight hours are short, the harvesting period is relatively long. Echigohime is grown slowly in warm greenhouses from flowering to harvest, and the time and care that goes into their production makes them very sweet and low in acidity. The Echigohime of Yajiro Farm are very sweet, with an average sugar content of 12° and a good aroma, and are used by local confectionery shops.
We use the following innovations in soil preparation to grow sweet strawberries with as little pesticide as possible.
●Mixing straw and rice bran into the soil to slowly create good soil suitable for strawberries.
●For sweetness, chitosan, a natural ingredient extracted from shrimps and crabs, is used.
Echigohime is soft and easily damaged, it is shipped using special packing materials, we deliver not only within Niigata city, but also nationwide from Hokkaido to Kyushu.
Edamame is one of the signature summer products at Yajiro Farm.
The edamame harvested early in the morning is fresh with exceptional taste and aroma. Yajiro Farm's edamame is one of our popular products in our farm and with many customers requesting regular deliveries during harvest season. As we coordinate, the harvesting of different varieties of edamame one after another when they are ready to be picked. Please enjoy the Edamame of our farm as a snack for children or with beer in the summer.
Another typical summer product at Yajiro Farm is “Pickles of Niigata Black Juzen Eggplant”. It is ideal as a snack with beers or as a side dish with rice, noodles and so on. The “Niigata Black Juzen eggplant” grown is a lovely rounded shape, with firm flesh that is soft and has a subtle sweetness. The eggplants are harvested early in the morning and carefully pickled on the same day. As they contain no reservatives, they have a short shelf life. Please consume the pickles as soon as possible after receiving them.

They go very nicely with dishes such as miso soup and stir-fried vegetables, and are also delicious raw in a sashimi-style with wasabi and soy sauce or salad.
The Japanese rice is grown in fertile “Kameda-go” using reduced pesticides. During the harvest season in September, we accept reservations for the whole year. The quantity ordered is stored in a temperature-controlled warehouse by our farm, and the rice is milled and delivered after each your request, so that you can always have delicious rice. Our farm grows the following five varieties of Japanese rice.
The sweetness and chunky consistency are exceptional. It is characterised by its glossy, fragrant, and strong umami after cooking.
Koshiibuki is a new variety from Niigata Prefecture, created by crossbreeding “Hitomebore(= love at first sight)” and “Domananka(=Centre)”, which have Koshihikari as their parentage, and are rarely available outside of Niigata Prefecture. Koshibuki has the taste, aroma, gloss, and consistency of Koshihikari, but has lighter stickiness than Koshihikari.
KoshiIbuki was named based on the results of a Niigata prefectural referendum. It means "new breath(=Ibuki in Japanese) of Koshi(= old name of Niigata)” and is said to be a suitable name for rice in the 21st century, inheriting the lineage of Koshihikari, with an image of freshness and vitality. It is also an 'early variety' that can be harvested early while having the same taste as Koshihikari, but it is also resistant to unusual weather conditions and can ensure stable quality and yield even in high temperatures and cool weather damage.
Our farm’s Akitakomachi is a popular rice with a texture and grain as firm as Akitakomachi from Akita Prefecture. It is a pedigree of Koshihikari, but has a fluffy, soft but less sticky, crisp taste and texture.
Wataboushi is one of the varieties of glutinous rice promoted by Niigata Prefecture and is grown only in Niigata prefecture, and can be grown in “Kameda-go” because of its fertile soil. Wataboushi is characterised by each grain being slightly larger, shiny, and sticky, making it perfect for use in Sekihan (Glutinous rice steamed with red beans) and okowa (Steamed rice). It can also be used to make rice cakes, so it can be eaten as both steamed rice and rice cakes. Our farm's Wataboushi is different from others because of its firm texture, good palatability, and high quality.
oganemochi is the highest brand of glutinous rice, known as the 'king of glutinous rice'. i Our farm’s Koganemoch has a good stickiness, texture and crunchiness, and it is also used in the rice cakes sold in winter.
Morohashi Yajiro Farm's winter product is Mochi (rice cakes).
The glutinous rice used for the Mochi is “Koganemochi”, the best variety of glutinous rice, grown in our rice paddies with as little pesticides as possible. The farm's handmade Mochi are carefully pounded with a pestle and mortar by the farm's owner (81 years old) and other employees. Unlike mass-produced Mochi in factories or Mochi pounded with a mechanical pestle, the Mochi have a different consistency and stretch, and the taste is exceptional. The Mochi are also cut and wrapped by hand.
